Grilled Cumin Rubbed Sirloin Steaks with Salsa Fresca

For the salsa:
1 cup chopped fresh tomatoes
2 tablespoons chopped red onion
1 clove garlic, minced
1 tablespoon chopped fresh cilantro leaves
1 tablespoon fresh lime juice
dash Tabasco sauce, optional

For the steaks:
1 teaspoon ground cumin
1 clove garlic, very finely minced
salt to taste
freshly ground black pepper
4 top sirloin steaks, about 4 ounces each
1 lime, cut into 8 wedges

For the salsa:
1. In a small mixing bowl, combine the tomatoes, onion, garlic, cilantro and lime juice. (This can be made in advance and refrigerated until ready to serve.)

For the steak:
1. In a small bowl, combine the cumin, garlic, salt and pepper.

2. Rub the steaks with the cumin mixture and refrigerate until ready to cook.

3. Preheat the grill to high.

4. Cook the steaks on the grill to the desired doneness, about 5 minutes per side for medium doneness. Transfer the steaks to a platter.

5. Squeeze the juice of 1 lime wedge on each steak. Garnish the steaks with Salsa Fresca and the remaining lime wedges.
